Is your table completely flat? Many mount cutters will follow the contours of the table, so the blade depth is varying as you cut.
Are you using a good quality mount board? Cheap boards are very inconsistent, and generally more difficult to get a good result.

The Fletcher 3100 (available from Lion, or I saw one for sale second-hand on here yesterday) is a very good quality alternative to the Excalibur, and smaller on the wall. There are pros and cons to both, but I would happily use either

What sort of finish are you wanting to achieve, and what are you starting with (wood variety/profile)?
Acrylic gesso and RSG gesso are very different, depends what you are trying to do.

As fast as I am aware the best manual oval/circle cutter is the Fletcher 1100. That one is done with ‘Driftwood’ milk paint and clear wax. I use milk paint because I like the tone it gives to wood, but also because it is very quick and easy.
