2 things.

Have a front moulding set up as a cabinet door..... with small hinges and (latched)secured with small rare earth magnets.

Attach the book into a recess with strips of polyester film (Mylar® or Melinex®) --- strap the cover sheet back and nothing over the book cover.

Check with a sign writers supplier.... they have a MDF that has a smooth coated white surface that might be more suitable.

A point to remember, All board manufacturers are technically "converters".... that is, they assembly the boards from layers of paper. This is done with at least 2 types of adhesive - a vegetable based adhesive (wheat/rice paste , dextrene[corn] based products.... & methyl cellulose bas...

I have made super heavy boards made up to 4 layers thick! I have always used starch paste. If you did not have any in stock you can go to the paint store and purchase some old fashion premixed wallpaper paste. The newer formulas have some PVA. These pastes have stabilizers and preservation chemicals...

A hole is drilled into each corner of the acrylic sheets........... this hardware is then inserted into the holes and secured to a wall.

I think that I have a slight difference in terminology . What I mount to is what you call an undermount. A filler board is then below that board is necessary.

You always mount to a backing board(mount board) rather than to the window mount (mat). An additional board can / should be placed behind the mounting board for additional support.

Warm traditional gesso can be sprayed through a spray gun. The key is a nozzle that will accommodate the thickness and pre heating the sprayer in a bucket of warm water.
