Depending on your needs, of course, but consider that 1) a Vacuum Press theoretically needs a bit more maintenance (gaskets, etc.) than a heat press (thermostats are the only things that need periodic replacement), and 2) Vacuum presses are generally more expensive to begin with.
With a vacuum press you can only mount items that don’t exceed the area of the press e.g. 44” x 68”. Chances are that you won’t have too many mounting projects that would exceed that, but you’d have to decline jobs larger than that. And, a press that large eats up an awful lot of real estate in your shop.
With a dry mount press, you can mount larger pieces in “sections”. Although the platen on my Masterpiece 500T is only ~26 x 34, I have mounted items up to 52” by 96” on occasion.
And, generally, with a vacuum press you'll most often use a spray adhesive, which, because I am a klutz, I find messy and not the most pleasant smelling stuff in the world.

i use hot press dry mount film and dry mount tissue with my vacum press
the dry mount tissue is very very good, as its not sticky at all to the heat is applied, which works very well
