This things seems to be for tilting my Valiani mat cutter. I like the angle. Is there any situation I want to tilt it more?

If I cut them off I will have extra space to build my new vertical storage/drawers/table solution.

If I cut them of will I one day regret it?

A CMC can operate vertical / horizontal or somewhere in between. The angle and height is all about the comfort of the operator(ergonomics). Ex: are you 185 or 155 cm tall?

I’m 170 cm. If I would tilt it more I don’t think I would reach the top “bar”.

I used to be 180cm. Today, after decades of working, I am closer to 175cm.

The top of the bar(?), I assume the top of the working surface of the machine, is not relevant other that possibly for cleaning the machine.

What is relevant is the height for lifting and removal of the mount boards and the access to the cutting head for blade replacement.

It’s not a CMC, it’s a pneumatic assisted manual cutter.

The same strain on the body applies with either type of machine.

You referred to it as a CMC, with which there is no need to stretch to make cuts as there is with this.
