But have you tried the acid-free cauliflower?

I can assure you that even acid free brussel sprouts and cauliflower will have a damaging effect on any artwork. The off gassing can be a severe problem even before you finish the frame.

off-gassing after cabbage and cauli might even break the glass which is also a hazzard
