In the summer I sometimes fish for Tope in The Wash which is a smallish shark (up to 70lbs.) and have noticed the tip of the nose area is very pink which would indicate a lot of vascular structures and I guess there are a lot of sensory cells in this region as well.
This might account for the apparent hypnosis due to stimulation of this part of the shark's anatomy.
